This white wine is made from Pinot Blanco and Pinot Nero grapes. Pinot Grigio is one of the most famous grapes in the world and synonymous with Italy. It comes from 10-15 year-old vineyards, located partly on plains with chalky soils and partly on hills. This unique location gives the wine a delicate minerality, substantial structure, and characteristic aroma.
A special combination of grape varieties
For this wine, winemaker Martino uses two different grape varieties. Pinot Bianco is part of the grape family. This grape produces aromatic white wines with a stable acidity. Pinot Nero (Pinot Noir) adds a bit more power and imparts a fresh, juicy flavor. The vineyards are located approximately two hundred meters above sea level. The winemakers strive to be as careful as possible during harvesting, ensuring that the harvest is not carried out during the hot midday sun. This prevents the Mavum Pinot Bianco Pinot Nero grapes from fermenting prematurely.
After the grape harvest, it goes directly to the winery. Because Pinot Noir is usually a red grape, winemakers only press the grapes very lightly. The resulting must is then immediately separated from the skins. This is the only way to ensure the wine remains white. Pinot Bianco grapes are also lightly pressed, but only after a brief rest at cool temperatures. This creates a more intense and fruity aroma in the Mavum Bianco Pinot Nero. Once fermentation is complete, the finished wine is aged briefly in stainless steel vats.
A pleasant Pinot Nero from Biscardo
The Mavum Pinot Bianco Pinot Nero has a straw-yellow color in the glass. It also has light green hues, primarily due to the Pinot Blanc content. The bouquet reveals delicate fruit notes of ripe peaches and pineapple, followed by light citrus notes. The palate is pleasantly soft with a balanced body and fine acidity.
