Ademan Carabizal Tinto Roble, DO Toro
Ademan Carabizal Tinto Roble is a Toro with energy, juicy red fruit, and just the right amount of oak to give the wine extra depth. You can immediately taste why Tinto de Toro is so beloved in this region, as the glass combines ripe berries, spicy notes, and a silky finish with remarkable drinkability.
Vineyards and region
The grapes come from wire-trained vineyards with an average age of 35 years. The topsoil consists of sand and stones, which drain quickly and warm during the day to optimally ripen the grapes, while cool nights preserve freshness and structure. Hand-harvesting into small crates and a second selection in the cellar ensure that only perfect fruit enters fermentation.
Vinification and maturation
Fermentation takes place at a controlled temperature for 17 days, with two remontages per day. Remontage is the gentle circulation of must or young wine over the skins to extract color, aroma, and soft tannins. The wine is then aged for five months in French oak with medium toast. What does Roble in Toro mean and what effect does it have on the flavor? Roble indicates that the wine is aged briefly in oak, in this case for several months, which gives it subtle spiciness, a rounder texture, and extra length without losing the fruit. The alcohol content is 15 percent.
Grape composition
Tinta de Toro 100 percent. This is the local version of Tempranillo with compact bunches and thick skins, historically established as the grape variety of Toro due to its vibrant color, concentrated berry aromas, and natural structure that is appealing even when young.
Tasting notes and serving suggestions
Amaranth with violet hues. The aroma reveals red berries, wild fruits, a hint of sweetness, and toasted notes. The palate is fresh and broad, with a perfect balance of fruit and oak, and a long, silky finish that reveals the intensity of Tinta de Toro. Serve at 14 to 16 degrees Celsius with red meat, aged cured meats, pasta with tomatoes and herbs, or firm grilled whitefish. This wine is ready to drink immediately and can be aged for approximately four years under optimal conditions.
About the winery
Bodegas Maires was founded in 2015 when cousins Fernando and Pablo decided to continue the family tradition. The name Maires refers to four generations of grape growers. Since 2020, they have been working in a new winery with a clear vision: making wines that are immediately understandable and simultaneously express the pure character of Toro.
