Ademan Carabizal Magnum 1.5 L Tinto Roble, DO Toro

A magnum that showcases Toro at its finest, with juicy red fruit, subtle oak spice, and the added flair of its large size. What's the advantage of a magnum with red wine? Due to the lower oxygen-to-wine ratio, a magnum ages more slowly and retains freshness, tension, and depth longer, making it ideal for both the table and the cellar.

Vineyards and region

The grapes come from wire-trained vineyards with an average age of 35 years. The topsoil, composed of sand and stones, warms quickly while draining well, making Tinta de Toro ripe and concentrated. Cool nights keep the acidity vibrant. Harvesting is carried out by hand into crates and rigorously selected again in the cellar.

Vinification and maturation

Fermentation takes place at a controlled temperature for 17 days, with two remontages per day. Remontage involves pumping the must over the skins to optimally extract color, aroma, and soft tannins. The wine is aged for five months in medium-toasted French oak barrels. The alcohol content is 15 percent. The character remains fruit-driven, with just the right amount of oak influence for roundness and length.

Grape composition

Tinta de Toro 100 percent. This is the local Tempranillo with compact bunches and thick skins, beloved in Toro for its concentrated berry aromas, natural structure, and powerful color that also shines beautifully in magnum format.

Tasting notes and serving suggestions

Deep cherry red with violet hues. The aroma reveals red berries, wild fruits, a hint of licorice, and toasted notes. The palate is fresh and broad, with a precise balance of fruit and oak and a long, silky finish. Serve at 14 to 16 degrees Celsius. A magnum pairs beautifully with shared tables featuring red meat, aged cured meats, pasta with tomatoes and herbs, or firm grilled whitefish. Decant for 30 to 45 minutes for added lightness and suppleness. Under optimal conditions, this magnum can be aged for approximately four years.

About the winery

Bodegas Maires was founded in 2015 when cousins ​​Fernando and Pablo revived the family tradition. The name Maires refers to four generations of grape growers. Since 2020, they have been working in a modern winery with a clear mission: making wines that are instantly recognizable and that express the pure and contemporary character of Toro.
