Agusti Torello's cavas are known as some of the best around. They produce high-quality cavas made exclusively from traditional grape varieties. They are made in the small town of Sant Sadurni d'Anoia, using the same method as Champagne. What makes Augusti Torello cavas so special is that they are only disgorged upon ordering, meaning the yeast residue is removed and the champagne cork is inserted. The Trepat grapes come from the Ubac estate in Sant Joan de Mediona. The vines are planted at an altitude of 500 meters. The grapes are harvested entirely by hand at peak ripeness. In the winery, they undergo an eight-hour maceration and 28 days of temperature-controlled fermentation. Finally, the Cava is aged in the bottle on its own lees for at least 24 months in the cellar. Only upon ordering is the aging process terminated, the lees removed, and the cork inserted.
