Vineyards and region

The grapes come from various plots that combine calcareous clay with varying altitudes and exposures. Calcareous clay typically emphasizes tension and finesse, while the blend of exposition promotes ripe fruit while maintaining freshness. This creates the foundation for a wine that is both citrus-driven and round in texture.

Vinification and maturation

Harvesting is done by hand. Approximately eighty percent is fermented in stainless steel for pure fruit expression and twenty percent in oak barrels for extra layering. Maturation follows on fine lees, with approximately eighty percent in steel and twenty percent in oak, for nine to eleven months. What exactly does aging on fine lees mean? The young wine rests on its fine yeast deposits, increasing texture, creaminess, and depth without overpowering the fruit.
