Allegrini Palazzo della Torre Veronese IGT
Palazzo della Torre is an iconic wine from Allegrini, the family-owned winery that has played a leading role in Valpolicella and far beyond since the 16th century. The wine is made partly from dried grapes, an innovative technique that Allegrini masters like no other. With an impressive track record and global acclaim, this wine is among the house's classics.
Vineyards and region
The grapes come from vineyards around Villa Cavarena, located at an altitude of 450 to 520 meters. These southeast-facing slopes in the heart of Valpolicella are rich in clay and limestone, which contribute to the structure and elegance. The vines are on average over 15 years old and are trained according to the Guyot system. The combination of altitude, soil type, and microclimate gives the wine a distinctive character.
Vinification and maturation
In September, 70% of the grapes are fermented in stainless steel tanks. The remaining 30% is carefully dried and vinified in December, at temperatures between 8 and 22°C. The two parts are then expertly blended into a single, expressive wine. Maturation takes place in barriques for at least 15 months, followed by two months of rest and at least another seven months of bottle aging.

This versatile wine pairs beautifully with lasagna, eggplant parmigiana, or even international dishes like paella or butter chicken. Serve preferably at 16-18°C.
