Antinori Cervaro della Sala 2023 | Top-class white from the heart of Umbria
If there's one Italian white wine you must try at least once in your life, it's Cervaro della Sala. The 2023 vintage of this legendary Antinori cuvée proves once again why it has been the benchmark for elegance, depth, and craftsmanship since 1985. What began as a revolutionary experiment with malolactic fermentation and barrique aging, unique in Italy at the time, has become an international icon. And all of this just a stone's throw from Orvieto, in the historic Castello della Sala.
High-altitude vineyards with character
The grapes grow on slopes between 220 and 485 meters above sea level, surrounding the château. The chalky soil with fossil remains and the cool microclimate ensure slow and aromatic ripening. The Chardonnay was harvested in late August, the Grechetto in mid-September. Both grapes achieved optimal balance thanks to the uneventful growing season of 2023.
Vinification with vision
After a brief maceration at 10°C, the must is clarified by gravity. Ninety percent is fermented in French barriques, with partial malolactic fermentation for that characteristic softness. In February, the blend is made with the steel-fermented Grechetto, after which the wine matures in bottle for several months in the Castello della Sala cellars.

Scent and taste – elegance in layers
The nose reveals notes of acacia blossom, ripe citrus, lemon jam, ginger, roasted hazelnut, and flint. On the palate, it is full-bodied, fresh, and precise, with a rounded texture and a long, mineral finish. The balance of wood, acidity, and fruit makes this wine both gourmet and refined.
Serving suggestions
Pairs perfectly with seafood, white meat, poultry in a cream sauce, or pasta with mushrooms. Serve at 10 to 12°C .
