The grapes used to make this wine come from the first Sauvignon Blanc vineyards planted in Rueda 28 years ago. The soil, formed by its characteristic gravel, is very poor in organic matter and features limestone outcrops at the highest levels. Pruning is performed at various times to achieve a limited yield and high concentration. The emphasis is on harvesting overripe grapes. A sweet wine, surprising for its freshness and complexity. After several years of tasting and creating small batches, the winery succeeded in developing this Apasionado.

The vineyards of the Jose Pariente winery are located in the heart of the Rueda appellation, at an altitude of 750 meters above sea level. At this winery, family is at the heart of the winery, where tradition and a passion for fine wine are combined. In the 1960s, Jose Pariente began producing artisanal white wines from grapes of exceptional quality. Today, his daughter, Victoria Pariente, is at the helm. Under her leadership, the winery has become a major player in the Rueda region. With a passion for innovation and utilizing the most advanced technologies, Bodegas José Pariente produces five distinct white wines. Five unique expressions of the terroir's temperament, they simultaneously demonstrate the family's perfect understanding of the land, the vines, the varietals they work with, and the art of winemaking.

An exceptionally fine example of a Sauvignon Blanc wine. The grape is harvested when overripe, resulting in a sweet wine with a surprising and impressive freshness. Delicious as an aperitif and pairing well with main courses and desserts. It doesn't have a characteristic aroma for a sweet wine, but rather a unique combination of notes of vegetables and tropical fruit, freshly mown grass, and a hint of minerality. A pleasant and refined creamy mouthfeel, retaining the characteristics of the Sauvignon Blanc grape. The wine is highly intense and well-structured. A perfect combination of fresh acidity, alcohol, and sugars.
