This wine is definitely a tongue-twister. Appassionante is a mouthful. Literally, because the aroma and flavor are mouth-filling. The name derives from the Appassimento technique, borrowed from Amarone. Some of the grapes are dried before pressing, which makes the aroma and flavor fuller and more concentrated.
