The Spanish bubble of Arte Latino
Cava is the Spanish equivalent of Champagne. Like Champagne, the production of Cava is subject to many regulations. For example, only a few grape varieties are permitted for making Cava. Macabeo, Parellada, and Xarello are commonly used, coincidentally also the grape varieties used in this Arte Latino. However, the plump Chardonnay is increasingly being used in Cava.
