When old school friends Anthony Aubert and Jean Charles Mathieu talked about their future plans one day, they had one thing in common: they were both interested in winemaking. But Anthony and Jean Charles didn't just want to make wine—their products had to be modern and ecological. And so they did: the Aubert & Mathieu team sources the raw materials for their wine blends from emerging small businesses and prestigious wineries in the south of France. There are no fixed rules for vinification, as the process is always based on the wine's characteristics. The focus is on carbon neutrality, biodiversity, sustainable viticulture, and eco-friendly packaging. AMY is a Pays d'Oc wine from the Mediterranean coast of France. The organically grown grapes ripen perfectly under the abundant sunshine of the Languedoc Roussillon region. They are carefully harvested at peak ripeness to preserve all their flavors. Once arrived at the winery, they undergo a three-week maceration and fermentation process in the traditional style. Finally, the wine rests for six months in concrete tanks before bottling.
