The vinification process of Hors Pistes Chardonnay Limoux

The friends decided to pursue their dreams and, in 2018, established a micro-merchant specializing in premium wines made in collaboration with environmentally conscious estates throughout the Languedoc-Roussillon region. Because they desire wines with freshness, balance, and complexity, they chose to work with growers whose vineyards are located at high altitudes. And the wines indeed exhibit freshness, balance, and complexity. Their belief in sustainability continues throughout their practice, with eco-friendly packaging, carbon neutrality, and a commitment to supporting local biodiversity. Their primary goal, in addition to producing high-quality wines, is to be carbon neutral. Limoux, at the foot of the Pyrenees, is one of the highest vineyards in Languedoc-Roussillon. This terroir imparts freshness, vibrancy, and richness to the wine. This is where Aubert and Mathieu planted this Chardonnay. This legendary grape variety benefits from a high-altitude clay-limestone terroir. At optimal ripeness, the grapes are harvested and sorted entirely by hand. In the winery, the grapes are selected again and gently pressed. Fermentation then takes place for 20 days in stainless steel at 18°C. The wine is then transferred to one-year-old oak barrels for six months of full malolactic aging.

This exquisite wine has a beautiful, light color in the glass. The aroma reveals soft almond and apricot aromas, enhanced by zesty citrus notes. The latter also provides the necessary acidity for good balance. A delicate wine with a full mouthfeel. A good pairing with sushi, cod fillet, and fresh cheeses.
