Off-piste, the danger of venturing off the beaten track. Aubert and Mathieu are happy to take a gamble. They're also on thin ice when they decide to plant Pinot Noir so far south. But just high enough in the foothills of the Pyrenees, they cultivate their Pinot Noir for this Hors Pistes. This legendary grape variety benefits from a clay-ferrous terroir at high altitude, making it fresh, vibrant, and rich.

Manual harvest for Aubert Mathieu Hors Pistes Pinot Noir

Anthony Aubert and Jean Charles Mathieu are two friends who decided to join forces to create wines in their own image: modern and environmentally friendly. This modern and dedicated vision unfolds in the finest terroirs of Languedoc-Roussillon, near Carcassonne. This ambition for a modern vineyard is embodied not only in the packaging but also in a strong ecological conscience. The goal is to produce high-quality wines, but with the environment in mind. The new Kate and Amy wines are inspired by two artists from the late 19th century. Their meeting also symbolizes the encounter between Old World and the originality of New World wines. At peak ripeness, the grapes are harvested and sorted entirely by hand. In the winery, the grapes are selected again and gently pressed. This is followed by traditional vinification at controlled temperatures. The wine is aged for six months in oak barrels before bottling.

By taking advantage of the altitude and cooler climate of the Haute Vallée de l'Aude, Aubert and Mathieu have succeeded in creating a truly remarkable and distinctive wine from a grape variety unusual for the region: Pinot Noir. Just like the name on the label, this is indeed a cuvée that ventures off the beaten path, and rightly so. It's a subtle and lively wine with surprising aromas of fresh raspberries. A light wine that quickly gives way to sweet flavors of red fruit, sour cherries, and notes of toasted tea leaves.
