Anthony Aubert and Jean Charles Mathieu are two friends who decided to join forces to create wines in their own image: modern and environmentally friendly. This modern and dedicated vision unfolds in the finest terroirs of Languedoc-Roussillon, near Carcassonne. This ambition for a modern vineyard is embodied not only in the packaging but also in a strong ecological conscience. The goal is to produce high-quality wines, but with the environment in mind. The new Kate and Amy wines are inspired by two artists from the late 19th century. Their meeting also symbolizes the encounter between Old World and the originality of New World wines.
Kate d'Aubert and Mathieu is one of their latest discoveries. This white variety is made entirely from Sauvignon Blanc, harvested from organic plots. The soil consists primarily of limestone clay, which gives it unique characteristics. The grapes are harvested at night to preserve their freshness. At the winery, the grapes are then destemmed and gently pressed. Fermentation then takes place in temperature-controlled vats.
