Ayala's Craftsmanship
This Ayala champagne is made from 80% Chardonnay and 20% Pinot Noir grapes. However, these are no ordinary grapes. All the grapes used for Ayala Cuvée Perle d'Ayala Champagne come from Grand Cru vineyards. These are the highest-ranking vineyards in Champagne. The Chardonnay grapes are grown on Grand Cru plots in Chouilly and Le Mesnil-sur-Oger, while the Pinot Noir grapes are grown on Grand Cru fields around Ay. The yield of these grapes is low, so this Champagne is being released in limited quantities.

Before the bottles of Ayala Cuvée Perle d'Ayala Champagne can leave the cellars, a whole process takes place. Because the capacity for this champagne is limited, the bottles are aged longer in the cellars. Once they leave the Ayala cellars, the bottles have been aged for at least eight years.
