Champagne Ayala is the result of a committed marriage in the mid-19th century. Colombian diplomat Edmond de Ayala fell in love with a beautiful Frenchwoman from the village of Ay. They married, and part of their dowry was a magnificent country house with its vineyards. Champagne Ayala was born. For a long time, it was the champagne of choice at the British Court: King Edward VII was fond of it. Besides their classic Ayala Brut Majeur, the house is particularly successful with a luxurious rosé champagne, considered one of the finest.

These include vineyards in Ayala's backyard (Ay) as well as renowned Grand Crus such as Chouilly, Le Mesnil-Sur-Oger, Verzy, and Cramant—reputable names for true champagne lovers.
