A grape variety that originated in Sicily and is the most sold of all Sicilian grape varieties worldwide. Indeed, we're talking about Grillo. This grape was formerly used to make Marsala, a fortified wine famous on the island. This white wine from Baglio Gibellina is from the Sogno del Sud organic series, one of the best-selling series from this beautiful winery in Sicily. Nestled among the elegant and historic buildings is the modern winery surrounded by vineyards. Besides the vineyards, Baglio Gibellina is also rich in ancient olive trees that adorn the beautiful landscape. As mentioned, the Sogno del Sud series is completely organic. This requires a lot of extra work in the vineyards, but the results are certainly reflected in the exceptionally pure wines.

Grillo, the grape of Sicily

Grillo grapes feel truly at home on Sicilian soil, which is no surprise considering this grape's origins lie in Sicily. Grillo is one of the best-selling wines on the entire island, and we certainly don't find that surprising. The winemaker at Baglio Gibellina knows better than anyone how to craft a perfect wine from Grillo grapes. However, this does require a lot of work in the vineyards. The vines for this white wine are planted in very sunny locations. Thanks to the many hours of sunshine combined with the sea breeze, the grapes develop sufficient strength and a very pleasant freshness. At perfect ripeness, the grapes are all hand-picked. The harvest takes place around the end of August or beginning of September. It begins early in the morning to ensure the skins are more resistant to any bruising on the way to the press. All grapes are transported in small crates. After pressing, vinification takes place in steel vats. After bottling, the wine is aged in the bottle for another two months. Only then does the winemaker give his approval that the wines are ready.

The taste of the Baglio Gibellina Sogno del Sud Grillo

Where to begin? What a wonderfully fresh white wine this Sogno del Sud Grillo is. It has a beautiful straw yellow color in the glass. On the nose, this Baglio Gibellina Sogno del Sud Grillo has intense and pleasant exotic fruit with hints of spice. The palate is fresh and wonderfully soft, beautifully balanced with a lingering finish. This Baglio Gibellina Sogno del Sud Grillo pairs wonderfully with fish dishes like smoked salmon, tuna, and swordfish. This Grillo also contains a tiny bit of Viognier for a slightly floral touch.
