Therefore, these Merlot grapes are planted in such a way that they receive sufficient coolness from the evening breeze. At perfect ripeness, the grapes are hand-picked in the early morning. Because the harvest takes place early in the morning, the grapes are still dormant. This makes the skins more resistant to any bruising on the way to the winery and reduces oxidation. Once at the press, the grapes are pressed and vinified in steel tanks. After bottling, the wine will age in the bottle for several months before the winemaker releases the red wine.
