This sparkling wine comes from Auxerrois, near the Burgundy border. Since 1972, wine has been produced here in an underground quarry that produces unique wines. This white "crémant" is no exception, boasting a lively and powerful character.

The wines of Bailly Lapierre

Today, 430 winegrowers supply Bailly Lapierre with grapes. The main varieties are Pinot Noir, Gamay, Chardonnay, and, as the icing on the cake, the local Aligote. Near the Burgundy border, we find the Bailly Lapierre winery in the town of Auxerrois, where this winery produces refreshing wines in a unique way. In recent years, they have been producing sparkling wines that are beloved worldwide and offer a fine alternative to the more expensive wines from the Champagne region. What began as individual wineries merged into a cooperative. Since 2015, Les Caves Bailly Lapierre and Les Vignerons de Buxy have been working together. The grapes are harvested entirely by hand and transported directly to the winery in open bins. There, the Pinot Noir grapes are rigorously selected, and the pressing follows. Both yeast fermentation and malolactic fermentation take place. Finally, a second fermentation in the bottle takes an impressive 16 months. This is partly what gives this Pinot Noir its signature sparkle.

First and foremost, this Pinot Noir brut radiates in the glass with its pale yellow color and, of course, beautiful, dancing bubbles. The nose reveals aromas of white fruit and a touch of toast. The palate is lively, delightfully fruity, and juicy. It's a well-rounded wine that captures all the beautiful facets of Pinot Noir, but with a Burgundian twist.
