The Barasasso Appassite is an exquisite red wine from the sunny region of Puglia, Italy. This wine is the result of a harmonious blend of the indigenous grape varieties Montepulciano, Primitivo, and Sangiovese, which together offer a rich and full-bodied taste experience.
Vineyard and Vinification
The grapes for this wine are hand-harvested from carefully selected vineyards in the higher altitudes of Puglia. The higher altitude creates a significant temperature difference between day and night, contributing to optimal ripening and the complexity of the grapes. A portion of the harvest undergoes the traditional Appassimento process, in which the grapes are dried to increase the concentration of sugars and aromas. This technique results in a wine with an intense and concentrated flavor profile. The wine is aged for six months in French oak barrels.
Tasting notes
The Barasasso Appassite presents a deep ruby red color. The nose is dominated by aromas of ripe blackberries, plum jam, and hints of dark chocolate and vanilla. The palate is full and lush, with notes of dried fruit, toffee, and a subtle spice. The soft tannins and balanced acidity lead to a long, velvety finish.
Serving Temperature and Gastronomic Combinations
For optimal enjoyment, this wine is recommended served at a temperature of 16-18°C. The Barasasso Appassite is an excellent accompaniment to rich meat dishes such as braised beef, leg of lamb, and game. It also pairs perfectly with aged cheeses and hearty pasta dishes.
