The ideal conditions for Baron wines

Founded in 1933, this winery is located in Bordeaux. In addition to vineyards in the Médoc, this renowned winery also owns numerous plots in Chile and California. Baron Philippe de Rothschild SA's ambition is to produce the world's finest wines, each in its own category. The wines of the Baron Philippe de Rothschild family business are as much a work of art as they are a product of technical expertise. Carefully selected grapes from the finest plots form the basis for Rothschild's smooth and elegant wines. The conditions in the Central Valley offer every prerequisite for producing Chile's finest wines. During the day, a warm sea breeze blows deep into the valleys. At night, cool air descends from the Andes. In the drier northern regions, the subsoil is rich in rock brought by rivers from the Andes thousands of years ago. Irrigation is essential but used sparingly. Clay and loam dominate the more humid southern regions. These elements are an alluvial deposit resulting from Andean erosion. The groundwater level ensures a good water supply year-round.

Six months of maturation for the Baron Carl AC Saint Emilion

Baron Carl is produced using traditional techniques. The grapes are harvested by hand, then destemmed and gently crushed. Fermentation takes place in stainless steel tanks at a high temperature. A long fermentation period is used to ensure good tannin structure. Before blending, the wine undergoes malolactic fermentation, after which it is aged in barrels for six months. Once bottled, it is aged for several years in the Rothschild cellars. An attractive, open bouquet with an earthy hint and cherry aromas. A robust start, the wine's body develops autumnal, gamey flavors along with round and prominent tannins. This leads to a long, full finish with pronounced tannins and the presence of elegant oak.
