A man of many talents (doctor, philanthropist, playwright, and bibliophile), he bequeathed a vast collection of 18th-century books to the French National Library. This wine is made in a world-renowned wine-growing region, planted with premium grape varieties: Merlot, Cabernet Sauvignon, and Cabernet Franc.
The grapes are harvested by hand and transported in ten-kilo crates to the winery. Here, the grapes are destemmed and gently crushed. Fermentation takes place in stainless steel tanks at a high temperature. The duration of fermentation is determined by daily inspection of the various fermentation vessels. A long fermentation period is generally used to ensure a well-balanced tannin structure. Before blending, the wine undergoes malolactic fermentation, after which it is aged in barrels for six months.
