The beginning of the Baud winery

The ninth generation is now at the helm of the Domaine Baud family estate. There's a clear division of labor, allowing one person to focus on winemaking while the other on the vineyards themselves. The estate, located in the heart of Château-Chalon in the Jura region, dates back to 1742. In the early 19th century, phylloxera caused significant damage to the Jura vineyards. It wasn't until 1950 that René Baud rebuilt the devastated vineyards and winemaking could begin again. What began as 4 hectares has grown over the years to 24 hectares. A selection is made from the winery's oldest plots, planted in the 1930s. At optimal ripeness, the Chardonnay grapes are harvested and brought to the winery. Fermentation follows in used oak barrels. The wine then ages in the same barrels for another 20 months. A unique style is used during the vinification process. The wine that evaporates from the barrels is regularly topped up. This is primarily found in Burgundy, but rarely used in the Jura region.

What does the Baud Les Premices Cotes du Jura Chardonnay taste like?

A wonderfully fragrant Chardonnay. Floral aromas combine with a slightly buttery scent. A complex Chardonnay both in aroma and taste. Balanced and complex on the palate with light notes of apple. The palate also offers plenty of spice and roundness.
