Bepin de Eto positions this Extra Dry Millesimato in the heart of Conegliano Valdobbiadene DOCG, the historic heart of Prosecco, where the steep hills define its character. What does DOCG mean in Prosecco? DOCG is the highest Italian classification of origin, guaranteeing that the wine comes from a strictly defined area with controlled yields and production rules. This millesimato, originating from a single vintage, combines a controlled second fermentation with a short aging on lees, ensuring freshness and refinement.

Vineyards and region

The grapes grow on the first hills towards the Dolomites, in San Pietro di Feletto in the province of Treviso.

  • Altitude 270 metres : sufficient cooling influence from the higher zones towards the Dolomites, which maintains the aromatic tension.

  • East – West exposure : ensures even ripening throughout the day.

  • Clay soil : contributes to structure and a subtle minerality in the mouthfeel.

  • Planting density 4,000 vines per hectare : promotes competition between the vines and concentration in the grape.

Vinification and maturation

The vinification is aimed at precision and preservation of fruit.

  • Harvest early September : in the first 10 days, when the balance between sugars and acids is optimal.

  • Fermentation at 20°C : without skin contact to preserve purity and finesse.

  • Maturation 1 month in stainless steel : preserves freshness and primary aromas.

  • Second fermentation according to the Martinotti method : slow refermentation in pressure tanks at 12–14 °C with a short maturation on the lees, which refines the mousse.

  • Bottle pressure 4.5–5 atm : produces a lively yet elegant fizz.

At 11.5% alcohol, 5.5g/l acidity and 16g/l residual sugar, this style falls into the Extra Dry category, where the light sweetness is carried by crisp acidity.

The indigenous Glera grape forms the basis of Prosecco Superiore and is known for its fresh apple and pear aromas, floral nuances and lively acidity that are ideally suited to the Martinotti method.

Tasting notes and serving suggestions

In the glass, this Prosecco Superiore displays a light straw yellow color with greenish reflections and a persistent, fine effervescence. The nose opens with subtle notes of freshly baked bread, followed by apple, pear, and peach, complemented by rose petals and acacia blossom. On the palate, it is fresh and supple with a soft, slightly sweet attack supported by a distinct citrus note. The structure is delicate and balanced, with lively acidity that adds tension without being harsh. The finish is harmonious and immediately accessible.

  • Serving temperature : Serve this Prosecco between 6–8 °C so that the mousse remains firm and the fresh fruit notes come into their own.

  • Dishes : Ideal as an aperitif and pairs well with shellfish, light fish dishes, mussels or desserts with cream and fresh fruit.
