The Bepin de Eto winery is located in the most beautiful and prestigious area of ​​the Prosecco region, Conegliano Valdobbiadene. The magnificent vineyards are among the finest in the area. Everyone at this wonderful company contributes to the tranquility and perfection of the grapes. The vines are planted on slopes at the foot of the Dolomites, ensuring they receive ample sunshine and plenty of freshness, allowing the grapes to retain a pleasantly fresh hue. At peak ripeness, the Prosecco grapes are harvested by hand as early in the day as possible. This manual harvest allows for a thorough yet rigorous selection of the fruit. After pressing, the primary fermentation takes place at 20°C (68°F), followed by a secondary fermentation according to the Martinotti (Charmat) method. This involves a slow and natural secondary fermentation in pressure tanks at a temperature of approximately 12°C (54°F). This is followed by a short, aging period "sur lie" (on lie).
