The grapes come from the 'El Cuadro' plot in the 'Pago de Fuente Elvira' vineyard in La Seca. These vineyards are completely chemical-free. As you can imagine, the juice is pure and exceptionally clean. All bunches are harvested by hand in the early morning, ensuring only the best are selected. They are transported in small crates to Bodegas Pedro Escudero to minimize damage during transport. Why are the grapes harvested early in the morning? Because they are fresh and retain their wonderful acidity. A cool bunch is also less vulnerable to transport, making the juice for this white Bestia Parda truly fantastic.
Wood aging for the Bestia Parda Verdejo
Upon arrival, the bunches are immediately pressed and fermented in 250- and 450-liter French oak barrels for 7-8 months. The wine then matures for another year on the lees and rests in the bottle for 6-8 months. Yes, then it truly becomes a celebration and a true sensation to drink. Upon opening this white wine, a powerful aroma of orange peel, lemon zest, pineapple, and melon is immediately released. On the palate, it is a rich, groundbreaking Verdejo with well-balanced oak and structured acidity. On the palate, this Bestia Parda Verdejo offers notes of tropical fruit, lemon peel, almond, and vanilla.
