The Toro Albala winery is located in the Montilla Moriles region. It was the first bodega in this area to sell sweet dessert wines. They are experts in the Pedro Ximenex grape. The winery was founded in 1922 by Jose Maria Toro Albala. Approximately 30 percent of the grapes come from their own vineyards, with the remaining 70 percent coming from partner growers. The wine cellar, with approximately 6,000 barrels, is located in the underground tunnels.
Nothing is left to chance, and the entire winemaking process is closely monitored. The grapes are carefully harvested at peak ripeness. A strict selection process takes place in the old wine cellar, where only the very best are considered good enough. This is followed by temperature-controlled fermentation.
