By Ott Blanc Côtes de Provence
By Ott Blanc is the elegant white wine from Domaines Ott, blended at Château de Selle. This wine embodies the fresh, mineral style of Provence and is a refined complement to the renowned rosé from the same series. Ott's distinctive style is reflected in its purity, precision, and subtle aromatic layering.
Vineyards and region – chalky soils and fresh influence from the sea
The grapes come from carefully selected plots in the Côtes de Provence, where the soil is dominated by limestone and clay. The proximity of the Mediterranean Sea provides a cooling effect, slowing the ripening process and allowing the aromatic potential to fully develop.
Vinification and maturation – purity in every step
After a gentle pressing, the grapes undergo low-temperature fermentation in stainless steel tanks. The wine is then briefly aged on its fine lees, which adds extra roundness and complexity without losing its fresh character. No oak aging takes place to preserve the purity of the fruit.
Grape composition
52% Rolle (Vermentino), 48% Sémillon
The Rolle provides citrus and tension, while the Sémillon gives the wine roundness and floral finesse.
Tasting notes
Bright in color with silvery highlights. The nose offers an expressive bouquet of yellow fruit, a floral hint of rose, and an exotic mineral note. The palate is juicy and refined, with an elegant, rounded finish that lingers.
Serving suggestions
Ideal with shellfish, ceviche, or grilled sea bream. Serve at 8 to 10 degrees Celsius for optimal freshness and texture.
