Ca'Bolani is a renowned winery located in the Aquileia DOC, an appellation in northern Italy between the Alps and the Adriatic Sea. This estate was acquired by the Zonin family in 1970. The winery has a rich history dating back to the 16th century when the noble Bolani family owned the Tenuta Ca'Bolani winery. Today, the winery boasts the largest vineyard area in northern Italy, with approximately 550 hectares under vine. Surrounded by 999 cypress trees, the vineyards are situated on medium-textured clay soils that provide year-round fertile soil thanks to their high mineral content and the superficial aquifer that provides moisture. Ca'Bolani wines are known for their unique flavor profiles, a result of the region's unique microclimate. After harvesting, the grapes for Ca'Bolani Pinot Grigio are brought to the winery as quickly as possible. They are then gently crushed to prevent bitter flavors from being released from the skins. Fermentation begins with selected yeasts, giving the winemaker control over the fermentation process and the wine's development. The temperature during fermentation is controlled between 18 and 20 degrees Celsius, preserving the wine's fruity aromas. After fermentation, the wine is aged and bottled.
