The unique soil composition and location of the vineyard result in a very full and ripe harvest. However, the yield of this top-notch wine is minimal. Harvesting takes place at ideal ripeness in the morning and is carried out entirely by hand. Each bunch is inspected during harvesting, resulting in a dramatic increase in purity. The plots are harvested, variety by variety, in small crates and transported to Thalvin.
