The Primitivo grape, also known as Zinfandel in other countries, feels completely at home in Salento. The vines, with an average age of 20 years, produce full and rich bunches. Caleo's winemakers monitor this grape closely throughout the growing season. It's important that these grapes don't ripen too quickly, but that they receive sufficient sunshine. Pruning the vines is crucial, as is the influence of the sea. The wind from the sea cools the vineyards, allowing for smooth ripening. When the grapes finally reach the desired ripeness, they are harvested by hand. Only the finest bunches are selected for pressing. After vinification, this red Caleo wine is aged for several months in stainless steel vats for a beautiful finish.
