Calmel & Joseph Amstramgram Ceres Rosé is made from carefully selected grapes from the Languedoc region of southern France. The Cinsault and Mourvèdre grapes are picked for their vibrancy, while the Grenache grapes are harvested at a later stage to add fruitiness and roundness to the wine. After harvest, the grapes are completely destemmed and macerated for two hours at a cool temperature. This short maceration period allows for a subtle extraction of color and aromas from the skins, contributing to the rosé's characteristic salmon-pink color and refined aromas. The wine is fermented at a controlled temperature of 17°C, which helps preserve the freshness and fruity notes of the grapes. During racking before alcoholic fermentation, the fine lees are added, which adds complexity to the wine's palate and contributes to its texture. After fermentation, the rosé is not subjected to malolactic fermentation, thus preserving its freshness and vibrancy. After vinification, Calmel & Joseph Amstramgram Ceres Rosé is aged for three months in stainless steel vats.
