After harvest, the grapes undergo a settling process at a cool temperature. Alcoholic fermentation then begins at a controlled temperature of 15 degrees Celsius, lasting approximately 10 days. During this process, the fine lees (particles of grape pulp and yeast) are preserved and retained, adding complexity and flavor to the wine. After fermentation and stabilization, the four different grape varieties are aged separately. They are then carefully blended to create a harmonious and balanced wine. This blend is then aged for a further three months on the fine lees, contributing to the wine's texture and complexity.
