The harvest of the Cap Gris Rosé

Precision is essential to harvest on the right day. But thanks to the extensive experience of Cap Gris's winemakers, this isn't a problem. Usually, in mid-September, they start harvesting very early in the morning. This is done so early to prevent damage to the bunches and to preserve the freshness of the grapes. The Cap Gris family excels at this, and the results are stunning. Upon arrival, all the grapes are checked again on sorting tables, and any unusable bunches are removed. The juice ferments with the skins for just 30 minutes to achieve its beautiful light salmon-pink color.
