Former cobbler Amadio Pirovano gave up his career in 1850 to open a restaurant with his sons, featuring local wines. This proved a resounding success, leading in 1910 to the founding of their own winery, Pirovano. Initially a very small winery, it has grown into a global player. The wines, proseccos, and other sparkling wines are still made with the Pirovano family in mind. Over the years, they have invested heavily in modern winemaking techniques and acquired, among other companies, Casa Coller in Veneto.
The old vineyard for the Casa Coller Brut
This most famous sparkling wine, Casa Coller Brut, uses Garganega and Trebbiano grapes. These two complement each other perfectly and impart a rich, smooth character. All the grapes come from different vineyards in Veneto, giving this sparkling wine its distinctive character. This sparkling wine is made using the "méthode charmat," meaning that the second fermentation takes place in stainless steel tanks, rather than in the bottle, as with Champagne. This gives Casa Coller Brut a full, vibrant fizz and preserves its fruitiness.

The harvest is harvested overnight and rigorously selected upon arrival at Casa Coller. This ensures that only the finest bunches are bottled, which explains the soft and fresh style. On the nose, this Casa Coller Brut offers impressions of fresh green apples, peaches, a touch of freshly baked bread, and a touch of green herbs like mint. The palate is pampered with numerous soft bubbles that provide a pleasant freshness. The palate offers plenty of fresh yellow and white fruit, with apples and lime taking center stage.
