The winemaker grows the grapes according to the California Sustainable Winegrowing process. This not only results in a fantastic wine, but is also better for the environment. After harvest, pressing, and fermentation, the juice undergoes its unique oak aging, which defines the fine character of Cedar Rock Cabernet Sauvignon.

The length of the oak aging is a closely guarded secret of the winemaker. One thing we do know for sure: it's what creates the vibrant aroma and flavor of Cedar Rock Cabernet Sauvignon. Plenty of red fruit on the nose, with a distinct hint of vanilla. A touch of spice also emerges. But what do you taste? A touch of warm cherries. Time and again, we're treated to lush notes, revealing fine tannins, peppers, toasted oak, small strawberries, dried herbs, and sultry caramel.
