Vineyards and region
The grapes come from Comtats de Barcelona, on chalky soils at altitude and cool nights. This produces base wines with lively acidity and a bright, fruity profile. Nature sets the rhythm here, with abundant sunshine during the day and a fresh breeze in the evening—exactly what you want for sparkling wines with finesse.
Vinification and maturation
Each grape is fermented separately with its own yeasts. The primary fermentation lasts approximately 28 days at 16 degrees Celsius, along with the fine lees for added texture. This is followed by tirage, the bottling with yeast and sugar that initiates the secondary fermentation in the bottle, followed by aging on the yeast residues in the cellar.
