Cembra is the highest winery in Trentino, situated at an altitude of 700 meters above sea level. This makes it the second highest in all of Italy. The vineyards are located on the valley's characteristic terraces, where the grapes ripen perfectly. Founded in 1952 by a group of winemakers, this winery has now grown to 300. Unique to this location is the red rock on which the vineyards are situated. These rocks make the wines juicy, mineral, and exceptionally full-bodied.
The Chardonnay grapes for this Cembra Trentino are harvested entirely by hand in September. At the winery, the grapes are rigorously selected and then pressed. The juice is then transferred to stainless steel tanks, where fermentation begins at a controlled temperature. After this process, the wine is transferred to another barrel and aged on its lees for approximately four to five months. This process, known as sur lie, contributes to the wine's complexity and rich flavor.
