The name CH is a tribute to the owner's Swiss origins. This red wine is made from the Touriga Nacional grape variety, sourced from the oldest vines (over 30 years old) and the best location on a hillside near Lisbon. A work of art from this winery, it boasts depth and a wealth of flavor.
Only the very best grapes for CH By Chocapalha Rood
Paulo and Alice Tavares da Silva purchased this historic Quinta in the late 1980s and immediately began investing in the property. Initially, as in most of the region, their production was sold to cooperatives. However, when their daughter Sandra, once a top model, proved to be an exceptionally talented winemaker, the family decided to market their own wines. In 2000, Quinta de Chocapalha was born. This beautiful property, northeast of Lisbon, dates back to the 16th century. 46 hectares are devoted to vines.
The grapes are carefully harvested, with ripeness assessed in the vineyards themselves. This ensures that only the very best grapes are brought to the winery. They are transported in small crates to the recently renovated cellar. The grapes undergo cold pre-fermentation at low temperatures, followed by alcoholic fermentation at a temperature no higher than 26 degrees Celsius for 15 days. Finally, the wine is aged for 22 months in 100% new French oak barrels. A wise choice, as it allows us to still enjoy the delicious oak notes in the wine.
Rich aromas of CH By Chocapalha Red
The CH has an intense color with violet hues. The aroma reveals rich notes of ripe red fruit and some floral notes that are well integrated with the aromas of the French oak. On the palate, it has good structure with mature tannins, giving the wine excellent body and great potential for bottle aging. This wine pairs very well with meat dishes.
