Billecart-Salmon owns 30 hectares of vineyards, and the remaining grapes are purchased from trusted winegrowers with whom they have worked for many years. The Chardonnay and Pinot Noir grapes come from 1er and Grand Cru vineyards near the main Champagne city of Epernay. Tradition and modern technology go hand in hand at this centuries-old Champagne house. Excellent champagnes from Billecart Salmon
It all began in 1818 when Nicolas François Billecart and Elisabeth Salmon joined forces to create a Champagne house focused primarily on the excellence of its wine. Since then, each family member has strived to perpetuate the family tradition by remaining true to the focus on quality and always striving for excellence.
After a careful harvest, the wine is cold-stabilized at 5°C and cooled in stainless steel tanks at 12°C. The temperature gradually rises to 18°C for malolactic fermentation. This exceptional cuvée is a blend of 100% Chardonnay wines from the finest plots of Grand Cru vineyards in the Côte des Blancs. It is then aged for several years on the lees and in the bottle before being released.
A fresh and delicate champagne from Billecart Salmon
In the glass, the Brut Blanc de Blancs has a light gold color and a fine, delicate mousse. The nose reveals fresh, refined aromas with hints of citrus and minerals, followed by notes of white flowers. This champagne is fresh and delicate, elegant on the palate with a long, delicate finish. The longer you store this champagne, the more complex it becomes. This Blanc de Blancs pairs beautifully with oysters, scallops, and citrus fruits, but is also excellent as a toasted wine.
