The Billecart-Salmon estate offers a range of elegant and noble Champagnes, marking a breakthrough in French and international gastronomy. Founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, its motto has always remained the same. With a focus on quality and a commitment to excellence, this estate produces its Champagnes with great elegance. Today, the seventh generation, Francois Roland Billecart, is at the helm. The grapes are sourced from forty different cru sites in Champagne, covering approximately 220 hectares.
The Chardonnay, Pinot Meunier, and Pinot Noir grapes are carefully harvested in the winery, followed by cold stabilization at 5°C (5°F) and cool fermentation in stainless steel tanks. The temperature is initially 12°C (54°F) and gradually rises to 18°C (62°F) for malolactic fermentation. This exceptional cuvée is finally vinified entirely in oak.

The Brut Sous Bois is a pure wine with a sparkling yellow color and golden highlights. Bubbles dance in the glass, instantly delighting you with its intense and complex aroma. Thanks to its oak vinification, it boasts a rich aroma of dried fruit, fresh citrus, white fruit, and seductive notes of butter. On the palate, the complexity flows, filling the mouth with a soft, smooth texture. Deliciously creamy with vibrant freshness.
