The ideal conditions for the Fourchaume

Fourchaume is produced in the Bourgogne-Yonne region of France, specifically in the highly prized Chablis region. The Chardonnay used for its production finds ideal conditions here for development. However, winters are very harsh, and springs are often slow to flow. The vineyards are managed with the utmost care to protect the grapes from temperatures that sometimes drop below zero. With these principles, only a full-bodied, robust, and structured Chardonnay can be achieved.

The vinification of Chablis Premier Cru Fourchaume

The vinification of Fourchaume Chablis begins with the hand-harvesting of the grapes, followed by a gentle pressing at a controlled temperature to protect the precious varietal aromas. The vinification process takes place in steel vats, after which the wine is aged for nine months in oak barrels. The barrels are stored in the magnificent Chanson cellars, and the juice is given ample time to mature. The light golden color is very inviting. Floral aromas blend with citrus fruit aromas, along with subtle nuances of honey and a hint of vanilla. Delicate minerality on the palate with a tight and well-structured attack. The palate also reveals very pure fruit combinations and a touch of vanilla. The finish is long and rich with flavorful aromas. A delicious wine to pair with lobster and oysters, but also pairs exceptionally well with fish dishes, poultry, and veal.
