The extensive vinification process of Chateau de Haute Serre Geron Dadine

The beautiful Château de Haute Serre wine estate is located in the Cahors region of France. In 1973, the estate was purchased by the Georges Vigouroux winery. At the time, it had been completely neglected. To restore the vineyard, the juniper and oak trees had to be removed. It took about two years of intensive cultivation before the soil was ready for replanting. They worked hard until the soil was ready for the Malbec vines. It is now a world-class vineyard producing excellent Malbec wines. Thanks to the abundant sunshine, the Malbec grapes can ripen perfectly at an altitude of 300 meters. After harvest, the grapes are strictly monitored in the cellar. The resulting juice undergoes fermentation at a controlled temperature. The wine then matures for 15 months in barrels, 30 percent of which are new. This preserves the fruit while also adding some oak notes. Thirty percent of the juice is aged in barrels, while the rest remains in tanks. After this period of barrel aging, the wine is bottled and allowed to mature in bottle for another 12 to 18 months before being released for sale.
