Founded in the late 1990s, Château Haut-Blanville is a family-run winery in Pézenas, outside Montpellier. Bernard and Beatrice Nivollet moved from Paris to the Languedoc region in 1995 to pursue their dream of becoming winemakers. Drawn by the region's rich and diverse soils, they settled in the Languedoc Grés de Montpellier appellation. Over the years, they gradually selected and carefully cultivated a collection of vine plots throughout the region.
 The perfect climate for Grande Reserve Chardonnay Roussanne
 
Château Haut-Blanville now has 40 hectares of vineyards spread across the Languedoc Grés de Montpellier appellation and 30 hectares under the IGP Pays d'Oc. The warm, dry climate here is tempered by sea breezes, encouraging early ripening of the grapes and giving the wines a pleasant freshness. All vines are cultivated according to hybrid sustainable principles that combine "lutte raisonnée," organic farming, and biodynamics. To preserve the quality and diversity of the various soils, no artificial fertilizers are used in the vineyards.
 
The grapes are harvested mechanically at night. The white grapes are then immediately pressed and cooled to five degrees Celsius, after which their temperature can naturally rise again. The juice undergoes fermentation in new barrels or is added to existing wines. The wine is then aged for six to eight months, with regular stirring on the lees. Finally, the wine is transferred to stainless steel tanks, where it can naturally decant until ready for bottling.
 A white wine in perfect balance
 And the result is impressive. This white wine is a bright straw yellow in the glass. Its aroma is expressive and rich, with floral and white fruit notes prominently displayed. The aroma blends with exotic flavors like mango and sweet spices. A beautifully full-bodied wine, its power balanced by the acidity. This Chardonnay Roussane is rich, with refined aromas and a lovely freshness.
