- Location / Origin: The vineyards are located in the foothills of the Montagne Noire, with views of Carcassonne. The estate is based in Conques-sur-Orbiel and works with both AOP Cabardès and IGP Pays d'Oc here, with this Sauvignon coming from the cooler IGP part.
- Soil: The estate operates on rich clay and limestone soils. This subsoil gives the wines sufficient structure, while this white cuvée simultaneously retains its fresh character.
- Vineyard & harvest: The Sauvignon is grown on the lower parts of the vineyard. The grapes are harvested mechanically very early in the morning, to preserve freshness and minimize oxidation.
Vinification and aging
The cellar approach here is entirely focused on aromatic precision and a crisp, fresh mouthfeel.
- Harvest & Selection: The early harvest in the cool morning hours helps to preserve the aromatic freshness of Sauvignon Blanc well.
- Fermentation: After 24 hours of cold skin maceration under inert gas, cold pressing, static settling, and temperature-controlled fermentation follow. This approach keeps the fruit expression clear and gives the wine its fresh, precise style.
- Aging / Oak maturation: The wine overwinters in stainless steel tanks on its fine lees. This gives extra cohesion and aromatic depth, without the wine losing its lively character.
