The Stroetmann family is the big name behind Château Saint Roch wines, and they're no strangers to top-quality wines. For years, they've been crafting the finest wines in the Limoux wine region, among other places. Located in the south of France, the Limoux wine region boasts full, robust harvests. This is largely due to the powerful soil composition, which provides the Chardonnay grapes with abundant nutrients and structure. The soil is rich in minerals and limestone, allowing the Chardonnay grape to develop beautifully.

Once the harvest is ripe, all the bunches are harvested by hand. During the hot harvest, the bunches are rigorously selected, and only the best are transported in small crates to Château Saint-Roch. Here, the Chardonnay bunches are directly pressed and aged on lees, making this Limoux much fuller and creamier. After this period, the oak barrels are already waiting to mature this Limoux Chardonnay. For a full eight months, this Chardonnay matures in oak barrels in the Château Saint-Roch cellars. It fully develops and becomes a very mature wine.
