Château Villegly, located halfway between Carcassonne and Caunes-Minervois, is a winery and vineyard that Jean Claude Mas has been producing since early 2018, 20 hectares of which are in the Minervois appellation. It boasts a magnificent stone cellar dating from the late 19th to the early 20th century. Founded in 1892, Jean Claude Mas is a symbol of quality wines from the region. The grapes for this blend, consisting of Carignan, Cinsault, Grenache, and Syrah, are sourced from vineyards in the Minervois appellation, planted at altitudes of 130 to 220 meters. Here, the grapes thrive in nutrient-rich soil composed of stone and weathered sandstone. The Mediterranean climate allows the grapes to ripen optimally. The grapes are carefully harvested at peak ripeness. At the winery, a strict selection process takes place, and the grapes are immediately destemmed and then vinified separately. The Syrah and Grenache are vinified traditionally. The Carignan grapes undergo carbonic maceration, during which fermentation lasts for 20 days, after which the wine is aged for 10 months in American oak barrels.
