Today, it is one of the largest and fastest-growing companies in Puglia, steadily increasing the number of bottles produced and the quality of its wines. The company is located in Leporano on the Gulf of Taranto, in the renowned Salento region. The wines were created thanks to a winemaker who saw unique potential for quality wines in Puglia. Winemaker Cosimo Vervaglione has introduced modern vinification methods in his new cellar. He has managed to preserve the unique character of each grape variety and, despite the warm southern Italian climate, maintain freshness in his wines while keeping the alcohol content in check. The grapes are harvested by hand, followed by a strict selection. This is followed by maceration at a controlled temperature of 26 degrees Celsius. The fermentation cycle stops spontaneously, and finally, this Chicca is aged for eight months in wooden barrels.
The scents and flavors of Chicca di Manduria Dolce Naturale
The young vineyards from which Chicca was born are approximately fifty years old. Upon opening the bottle, dominant aromas of cherries, ripe plums, and blackcurrants with lovely spicy notes greet us. The palate is complemented by a soft, fruity start, lush dark fruit, and a long finish. Delicious with nut pastries, hard biscuits, aged cheeses, and all sorts of rich Italian dishes.
