On the steep slate slopes near Schweich, Christoph Clüsserath delivers Riesling with precision, tension, and refinement. Blue slate retains heat and imparts that recognizable, salty-mineral signature that Mosel lovers come back for. We tasted the recent vintage at Perfectewijn and were immediately charmed by its layered character and energetic freshness. What is spontaneous fermentation in Riesling? It's fermentation with natural yeasts from the cellar and grape skins, without added cultured yeasts, for greater expression and complexity.

Vineyards and region

The grapes come from Germany, Mosel, on the Schweicher Annaberg. These steep, slate-rich slopes ensure low yields and a high level of precision in aroma and flavor. Hand-picking is the norm here, ensuring only healthy bunches go into the cellar. This results in Riesling with vibrant fruit, distinct minerality, and length.

Vinification and maturation

Vinification is traditionally done with spontaneous fermentation in large oak barrels. This is followed by maturation on fine lees for added texture and depth. The analytical balance underscores the style with 12.5% ​​alcohol, 8.4 g/L residual sugar, and 6.6 g/L acidity, capped with Stelvin for maximum freshness in the glass.
