12 months of wood aging for Cignomoro 80 Vecchie Vigne Primitivo di Manduria

In 1921, one of the Matichecchi family members decided to pursue his passion for wine and purchased a vineyard, from which he timidly began producing wine. Unfortunately, the outbreak of World War II prevented further development, and the vineyard fell into disuse for years. In 2001, the grandson of the vineyard's original owner, Ciro Matichecchi, decided to return to his passion for wine. This is how the CignoMoro company was born, which produces wines from nearly 100-year-old vines using traditional winemaking techniques, modern technologies, and the desire to share these wines with the world. The grapes used to make this wine come from 80-year-old vines grown in the perfect climate of sunny Manduria. After harvest, the grapes are gently pressed and cooled to 10 degrees Celsius. They are then macerated for approximately 10 to 12 days, during which the wine is regularly pumped. After the first alcoholic fermentation, another fermentation, known as malolactic fermentation, takes place, during which the tart malic acid transforms into a delicate lactic acid. Finally, the wine is aged for 12 months in French oak barrels.

The intensely fruity bouquet opens with aromas of blackberries, black cherries, currants, and ripe plums, along with notes of cocoa, coffee, and tobacco. The palate is also fruity, with notes of fresh and dried plums interwoven with hints of spice, honey, and oak.
